Cheftimony Episode 041 – Amagansett

It’s a process (and level of dedication) that reminded me of the natural wine world.

Today my guest is Steven Judelson who, along with his wife and business partner Natalie, run the amazing Amagansett Sea Salt Co. Natalie and Steven are both former lawyers who traded their legal careers for a business in the culinary world.

In our talk, Steven explains the process he and Natalie use to harvest sea water and then harness the power of the wind and the sun to transform it into incredible finishing salt. It’s a process (and level of dedication) that reminded me of the natural wine world.

And something is clearly working. You’ll find Amagansett Sea Salt in the kitchens of leading restaurants across the United States, places like one of the must-visit restaurants I mentioned on last week’s episode, New York’s Eleven Madison Park.

Steven and I dive into food experiences as lawyers (think: running to the food cart when you have a few minutes to dash out of the office) and some similarities between the legal and culinary worlds. We also explore more existential topics… the pursuit of perfection and just what makes a difference in this world.

If you’ve ever thought of leaving office life behind for the farm (or if you simply love delicious things), you’re going to find a lot to love in today’s episode. Join us!
