Cheftimony Snack - Just what makes a great burger?

 


Today’s snack-sized episode answers a seemingly simple question: “Just what goes into making a great burger?”

That question was inspired by my visit last week to Vancouver’s Monarch Burger, a restaurant that carries on the delicious tradition of Chef Robert Belcham’s iconic Dirty Burger. That burger, a deceptively-small package built around a four-ounce patty of glorious brisket and chuck, packs a serious culinary punch.

Long-time listeners will remember that Robert, who was the second chef in Vancouver to welcome me into his restaurants as a stagiaire, joined me on Episode 016 of Cheftimony for a great chat about his career, his restaurants, and some fantastic cooking tips. It was a delight to have Robert back on the show today, and to get the burger goods straight from the source.
