Join me for a chat with Federica and Kim of the wonderful Uri Ristorante. It’s located in the village of Roddino in the Piedmont region of northern Italy. Kim and Federica are two chefs who met while working at Massimo Camia in Barolo. Fast forward some more restaurant experience, including work in both the United States and Spain, and Federica and Kim opened Uri where they celebrate the bounty of Piedmont by preparing traditional and Korean-flavoured dishes.

You’ll hear Chef Kim give his philosophy of cooking, which has three pillars: (1) where you are, (2) who you are, and (3) seasonality. Having sampled this philosophy in practice, I can say that it works, beautifully. Federica now works in the front of house, curating an amazing experience for Uri’s guests.
