Cheftimony Episode 034 – Voices
These are very strange and very trying times. For today’s show, I reached out to chefs around the world to try to build community and a sense of “in it together” for all of us. Longtime listeners will recognize two of today’s guests. You’ll hear from Chef Jenny Dorsey in Los Angeles who appeared on Episode 008 of the show and also from Chef Willin Low in Singapore, my guest on Episode 020.
On the show today as well are my Las Vegas friends Chef Brian Howard of Sparrow and Wolf and Chef Daniel Ontiveros of Scotch 80 Prime. As many of you know, Las Vegas is my favourite city to visit, and I’ve been lucky to be a stagiaire several times at Bouchon Bistro on the Strip. It was there, thanks to my friend Chef Joshua Crain, that I met Chef Daniel. Lots of good has come from that restaurant – Chef Brian was part of the opening team in 2004!
Later today, you’ll hear from a new connection, Chef Emma Bengtsson, Executive Chef of the two-Michelin-starred Aquavit in New York. Chef Emma was my only “cold call” for today’s episode, and she responded immediately to my Instagram invitation to be on the show: “Yes sure I’m in let me know when.” That’s what I love about the hospitality industry. It’s people are genuinely hospitable! That’s why I think it’s so important to support this industry – always, but particularly now.
