Welcome to Season 4 of Cheftimony. I’m glad we’re together again because wow is virtual human contact ever important these days! In the interview today, I’m delighted to bring you a talk with Chef Claire Lassam of the wonderful Livia Bakery on Vancouver’s Commercial Drive. Do you need a place where you can go – any time of day – and just know that you’re going to be looked after well? Maybe you’re after a croissant and a coffee to start your day, perhaps you need a loaf of sourdough to take away for your lunch, or you might just want to sit at the bar for some pasta and wine and a good chat.
That’s the kind of place Livia is, a restaurant where everyone is welcome and where building community is part of the business plan. Claire and I talk about everything from the often-brutal demands of the restaurant industry to the camaraderie in that same industry that keeps people going. Keep your ears open for Claire’s story about sharing soup with a chef friend at 2:00 in the morning, when she needed it most.
