Cheftimony Episode 045 – Sourdough 1.0

Today I’m delighted to be joined by my friend Greg Sugiyama, the first-ever co-host on Cheftimony.

Today I’m delighted to be joined by my friend Greg Sugiyama, the first-ever co-host on Cheftimony. Greg and I cooked together on the line at Vancouver’s Burdock & Co. restaurant years ago, and though we have both left the professional culinary world, we can’t help but talk food.

Our focus today is sourdough, and Greg is the friend I turn to first and last for advice on this topic. Take a look at his Instagram account – @stretchandfold – and you’ll understand why. On this first of two sourdough-focused episodes, Greg and I examine the process of sourdough, the nuts and bolts of making a great loaf. If you’re looking to get into baking or to improve your sourdough, welcome to the show.

Greg and I are joined today by three guests. Nicole Olsman, a corporate lawyer with a busy schedule and a love for baking bread almost every day stops by. You’ll also hear from Matthew James Duffy, a baking professor at Centennial College. And finally, Myra Maston who’s the head baker at Vancouver’s Ubuntu Canteen shares some tips and words of wisdom for anyone interested in trying their hand at sourdough.

Pour the coffee, serve yourself a delicious slice of bread, and let’s get going with Sourdough 1.0.
